Ingredients:
Crumble base and topping:
- 1 1/2 cups rolled oats
- 1 1/2 cups almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
Berry filling:
- 3 cups mixed berries, frozen
- 2 tbsp lemon juice
- 2 tbsp honey or maple syrup (optional)
- 1 tsp cinnamon
Directions:
- Add all of the crumble ingredients to a large bowl and mix until combined. Set aside.
- In a medium bowl, mix together the berry ingredients.
- In a parchment-lined baking dish, press half of the crumble mixture into an even layer. Add the berry mixture on top. Sprinkle the rest of the crumble mixture on top.
- Bake at 350°F for 35-45 minutes. Let cool for 10 minutes and enjoy.
