Have a fiesta with this vegan burrito bowl. This healthy and flavourful meal is filled with healthy fats, fibre, antioxidants and so much more. The “meat” is a hearty combination of mushrooms, celery and carrots, giving you ample nutrients like B vitamins, vitamin C, potassium & even vitamin D from the mushrooms! These vegetables alongside rice and greens provide fibre which helps regulate blood sugar! Antioxidants help keep oxidative stress at bay and are found in spices like paprika, coriander and cumin. No meal is complete without protein, which is found in black beans! Enjoy this nutritious & hearty meal!
Ingredients:
MUSHROOM "MEAT"
- 2 tbsp olive oil
- ½ cup carrots
- 2 stalks celery
- ½ yellow onion
- 5 cups mushrooms
- 1 tsp paprika
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp red chili flakes
- 2 tbsp soy sauce
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 can black beans (400g), drained and rinsed
- ½ can sweet corn (300g can), drained
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 2 cups rice, cooked
- 2 avocados, mashed
- 4 handfuls of leaf lettuce
- 1 cup salsa
- Fresh cilantro
- Lime wedges
Directions:
- Using a food processor, chop up the carrots, celery, onion and mushrooms all individually. You can do this step by hand, but using a food processor makes everything more fine and “meaty”.
- In a large frying pan over medium heat, warm up the olive oil. Add in the carrots, celery, and onion and cook until soft and translucent.
- In a separate frying pan, cook the mushrooms for approximately 5 minutes. Add in the paprika, coriander, cumin, red chili flakes, soy sauce and tomato paste. Cook for another 5-10 minutes.
- Add the carrot mixture to the mushroom mixture. Set aside.
- In a medium-size frying pan, heat the olive oil. Add in black beans, corn, paprika, cumin and garlic and cook on medium-high for 5 minutes, until they are slightly charred.
- Prepare the bowls. To each bowl, add in ½ cup rice, ½ mashed avocado, handful of lettuce, ¼ cup salsa, mushroom meat, seasoned corn and black beans, and fresh cilantro. Squeeze fresh lime over the top and enjoy!
