You’re going to feel peachy perfect after eating this one. We’ve taken a healthy twist on the classic Peach Crisp. Here’s what makes this version delicious and tasty:
- Peaches, obviously. This key ingredient is loaded with vitamins, minerals, and antioxidants, but you already knew that. When it comes to peaches, there’s more than just meets the eye. Peaches are a great source of fibre, providing both insoluble and soluble fibre. Insoluble fibre helps prevent constipation and soluble fibre provides food for good bacteria.
- Maple syrup, eh? It’s a great alternative to white and brown sugar because it has a lower glycemic index. This means that it doesn’t spike blood sugar as fast - preventing that dreaded sugar crash.
- Oats are in it. This whole grain is heart-healthy. Oats have fibres, including beta-glucans which research shows can help lower cholesterol and manage blood sugar levels. Even antioxidants, specifically those which are only found in oats, are found to lower blood pressure.
- What’s with the hemp seeds? They’re loaded with healthy fats, protein and nutrients like vitamin E, calcium, magnesium, iron and zinc. They’re a great source of gamma-linoleic acid (GLA), which is a skin saviour and can even help regulate PMS and menopause symptoms.
The perfect dessert or snack, this Peach Crisp is perfect for any occasion!
Here’s what you need:
For the base:
- 3 cups fresh or frozen peach slices
- 2 tbsp maple syrup
- 1 tsp vanilla extract
For the crumble:
- 1 cup rolled oats
- 1/2 cup chopped pecans
- 1/4 cup hemp seeds
- 1/4 cup avocado oil
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1 tsp vanilla extract
- vanilla yogurt or ice cream to top (optional)
- Preheat oven to 350°F.
- In a medium bowl, mix all base ingredients together.
- In another medium bowl, mix all crumble ingredients together.
- Place the peach base in a baking dish and add the crumble topping on top.
- Bake at 350°F for 35-45 minutes. Cool and top with yogurt or ice cream if desired.
